Moist and unbelievably morish, these irresistible cup cakes make a fantastic treat. Make them even more enticing by topping with smooth, creamy melted chocolate.
Ingredients
2 cups of standard flour
1.5 teaspoon of baking soda
1/3 cup unsweetened cocoa powder
1 teaspoon of vanilla extract
1 cup of sugar
1 cup of mayonnaise
1/4 teaspoon of salt
1 cup cold water
Melted Chocolate (optional)
Directions
1. Preheat oven for at least 15 minutes on a medium heat level. Meanwhile line muffin tray(s) with paper liners.
2. In a small bowl mix together the flour, baking soda, cocoa powder and salt.
3. With an electric mixer on a medium speed level, beat together the mayonnaise, sugar and vanilla extract in a larger bowl until all has been combined well. Beat in the flour mixture in portions of thirds, alternating with water, until fully blended. Beat for an extra minute, scraping bowl occasionally before dividing the batter evenly among all the muffin cups.
4. Bake for between 20-25 minutes, or until a toothpick inserted into the cupcakes comes out clean. Let the muffins cool in the trays for at least 5 minutes before removing to a plate or wire rack to cool completely. Top with melted chocolate if desired.
